    I adapted this recipe from something called "Armadillo Eggs" which were made with pickled jalapenos and stuffed with hot sausage. Just sounded too spicy for my lot. The original recipe calls for the final product to be rolled in Shake 'n Bake for Pork, but I've opted for the Italian bread crumbs instead.

    List of Ingredients




    1/2 lb Monterey Jack Cheese
    1/2 lb Sharp cheddar cheese
    1/2 lb sweet turkey sausage
    1 1/2 c Bisquick mix
    1 Egg
    1 c. (or so) Italian flavored bread crumbs
    20 pickled red pepper halves

    Recipe



    Shred the cheddar & Monterey Jack cheese. Mix bisquick, raw sausage, Monterey Jack & cheddar cheese together. Stuff each pepper with Monterey Jack cheese mixture. Grab a handful of bisquick mixture and mold around pepper. Use enough to cover pepper well. Dip wrapped peppers in beaten egg and roll in bread crumbs. Bake on broiler pan (can use cookie sheet) at 350 degrees for 25 minutes or until crisp.
