    Sausage & Salsa Quesadillas

    List of Ingredients

    1/4 lb. pork sausage, cooked & drained
    2 cups grated cheddar and/or jack cheese
    5 flour tortillas
    1/4 cup prepared salsa

    Recipe

    Preheat oven to 375°. Divide sausage & cheese into fifths; place 1/5 of each on one half of each tortilla; top with salsa. Fold tortillas in half over filling and place on lightly greased baking sheet. Bake 6-8 minutes, or until edges of tortillas are light golden brown & cheese is melted. Cut in wedges and serve.

    (for just the two of us, I don't mess with the oven . . . just fill the quesadillas & fold 'em . . . fry 'em in the skillet for a couple minutes on each side . . . my big skillet will hold two at once, and by the time those are eaten, a coupla more can be ready . . .)
