    Stuffed Pork Chops from Vicky

    List of Ingredients

    one half box of seasoned croutons
    one package of garlic and herb feta cheese
    2 teaspoons of crushed or minced garlic
    one egg
    one package of frozen chopped spinach
    splash of milk
    six slices of cooked bacon, crumbled
    six center cut porkchops
    salt, pepper, rosemary, and thyme to season

    Recipe

    Put spinach in microwave safe bowl with enough water to cover bottom, and cook for 8 minutes at 70% power, separating with a fork half way through cooking time. (Or follow package directions for stovetop.) Allow to cool for a few minutes.

    Crush croutons (a food processor works really well for this) and put in a large mixing bowl. Add feta cheese, garlic, egg, milk, crumbled bacon, and cooled spinach. Mix well.

    Cut a slit in the side of each pork chop, creating a pocket. Rub spices on both sides of pork chops, and dust the insides as well. Stuff each pork chop with stuffing mixture. Place any extra stuffing in a covered glass baking dish, and bake with pork chops in a 350 degree oven for about an hour.
