2 thick pork chops
2 cups water
1/8 cup salt
1 cup finely chopped onion
1/4 cup chopped pecans
4 ounces goat cheese

Cut a pocket in each pork chop. Dissolve salt in water and soak chops in it for one hour.
Sauté onion over medium-low heat until caramelized, about 25-30 minutes. Cool and mix with pecans and cheese. Stuff into pockets of pork chops, using toothpicks to close the pockets tight.
