1 pork loin roast
3 cloves garlic
fresh or dried thyme
teriyaki marinade
worsctershire sauce
potatoes (sweet or white) and carrots
Recipe
Make small slices along the length of the roast. Slice garlic cloves thinly and place in the slits. Sprinkle dried thyme in slits (or stuff with fresh thyme).
Place roast in a large ziplock bag and drizzle 2 to 3 tablespoons teriyaki marinade and 1 tablespoon worcestershire sauce over meat. Chill in frig for an hour (normally I do it overnight), and discard marinade.
Slice potatoes length-wise and place in roasting pan. Place roast in the center. Sprinkle with salt and pepper. Add about a 1/2-inch hot water to bottom of the pan.
Bake in a 400 oven for about an hour. Discard garlic and serve.
