Teriyaki Tenderloin From Mercy

List of Ingredients
1/2 cup dry sherry
2 Tbsp onion soup mix
2 Tbsp brown sugar
1/4 cup soy sauce
1-2 lb. pork tenderloin
Recipe
In a zipper top plastic bag, combine all the ingredients except the pork. Close bag and shake well to combine ingredients for a marinade. Add the pork and again close bag, squeezing out as much air as possible before zipping close. Allow to marinade overnight, turning bag occasionally. Bake at 400 degrees for about 45 minutes. Reheat marinade to boiling to kill cross contamination, and divide in half. Baste tenderloin with 1/2 and serve other half with pork.
**** DH is a restaurant manager and has heard too many stories about food borne illnesses. We prefer to toss out the marinade after removing the pork and start over for basting sauce and sauce to serve with the pork. However, my mom made this dish many times as I was growing up and still feels that the marinade is safe as long as it is heated to boiling before using. It "boils down"(pun intended!) to personal preference.
