Chicken Breasts w/Chipotle Orange Sauce

6 chicken breasts (I used boneless, skinless)
1 tsp. salt, divided
1/4 cup butter
2-1/2 Tbsp. flour
1 Tbsp. sugar
1/4 cup cumin (I used a heaping tablespoon)
1/8 teaspoon allspice
2 canned chipotle chilies, chopped
3/4 cup orange juice
1-1/2 cups hot cooked rice
1/3 cup cilantro, for garnish
Orange slices, for garnish

Sprinkle chicken breasts with 1/2 teaspoon salt. (I sprinkled with Cajun seasoning.) Heat butter in a skillet and brown the chicken. Remove.
Add flour, sugar, spices, chilies, and remaining 1/2 teaspoon salt to drippings in skillet and stir until it forms a paste. Gradually stir in orange juice. Cook this mixture, stirring constantly, until mixture thickens and comes to boil. **Next, add the chicken breasts and cover. Simmer over low heat until chicken is tender, about 30-40 minutes. Remove chicken to serving platter. Serve with hot cooked rice and sauce. Garnish with orange slices and cilantro.
**I put the chicken breasts in a pyrex dish and poured the sauce over them. Covered with foil and baked.
