Chicken w/40 Cloves of Garlic

1 tbsp. butter
1 tbsp. olive oil
1 (3 lb.) cut-up chicken
40 garlic cloves, unpeeled
2 tbsp. lemon juice
1/2 tsp. thyme
1 tsp. salt
1/4 tsp. ground pepper
1/4 cup water or white wineRecipe
Preheat oven to 350°.
Melt one tbsp. butter in a casserole big enough to put
chicken pieces in a single layer, mix with olive oil, add chicken and turn to coat. Add garlic and seasonings. Add 1/4 cup of water or dry white wine, cover and bake for 60 minutes. Remove cover and bake for and additional 30
minutes or until browned. Do not over cook.
