1/4 c. salad oil
2 slices fresh ginger
1/4 t. crushed red pepper
4 chicken cutlets, cut into 1/2 in. pieces
2 med. onions. thinly sliced
2 med. green peppers, cut into 1 in. chunks
3 T. soy sauce
1/4 t. sesame oil
Recipe
In wok or large skillet heat 2 T. oil until it begins to smoke. Add ginger, red pepper and chicken; stir fry until chicken is thoroughly cooked, about 3 min.
Transfer to serving dish. Add remaining 2 T. oil to wok and heat. Add onions and green peppers. Stir fry until onions are translucent.
Return chicken to wok; add soy sauce. Stir fry 1 min. Sprinkle with sesame oil.
