1 (5-6 lb.) turkey breast
1 1/2 cups apple cider
1/4 cup soy sauce
1/2 cup apple cider
2 Tbls. cornstarch

In a roasting pan, place turkey breast skin side up; bake at 450 degrees for 30 minutes, remove from oven and turn temp down to 325 degrees.
Mix 1 1/2 cups of apple cider with soy sauce and pour over the turkey breast. Insert a meat thermometer in the meaty part of the breast, making sure it does not touch bone.
Cover with foil and bake for about 1 1/2 to 2 hours more or until meat thermometer registers 185 degrees. Baste turkey breast frequently with the cider mixture.
Mix 1/2 cup cider and cornstarch thoroughly, stir into pan drippings. Return to oven and bake, uncovered, until sauce is thickened.
Remove turkey breast to a serving platter and serve with sauce.
