    Grilled Chicken over Spinach

    List of Ingredients




    1-2 T olive or canola oil
    1 T cider vinegar
    1 garlic clove, minced
    1 t dried thyme
    1/2 t dried oregano
    1/2 t cayenne pepper
    1/4 t salt
    Dash pepper
    4 boneless skinless chicken breasts

    Sauteed Spinach:
    1 green onion
    1 to 2 garlic cloves, minced
    1-2 T olive or canola oil
    1/2 lb fresh mushrooms, sliced
    1 pkg (10 oz) fresh spinach, torn

    Recipe



    In a bowl, combine the first eight ingerdients, mix well. Spoon over chicken. Grill, uncovered, over medium heat for 7 minutes on each side or until juices run clear. In a large skillet, saute onion and garlic in oil for 1 minute. Stir in mushrooms; saute for 3-4 minutes or until tender. Add spinach; saute for 2 minutes or until wilted. Transfer to a serving platter; top with chicken.

    Yield: 4 servings.
