    Honey-Ginger Chicken w/Orange Rice

    List of Ingredients

    1 1/2 cups water
    2/3 cup orange juice
    1 cup long grain rice
    1 tablespoon chopped parsley, or parsley flakes
    1 tsp grated orange zest
    1/2 cup pecan halves
    1/4 cup white cornmeal
    1 tablespoon honey
    1/2 tablespoon soy sauce
    1/2 tsp. ginger
    4 boneless, skinless chicken breasts

    Recipe

    In a saucepan, combine the water and orange juice; bring to a boil and stir in the rice. Reduce heat and simmer, covered, about 15 minutes, or until done. Fluff rice with fork; add parsley and orange zest, and set aside.

    Meanwhile, spray a broiler rack with Pam; preheat broiler.

    In food processor, combine nuts and cornmeal, and process until nuts are finely ground. Transfer to a plate. In a shallow bowl, combine honey, soy sauce and ginger. Dip chicken in honey mixture, then roll in cornmeal mixture. Broil the chicken 5 inches from heat until crusty brown and cooked through, about 4 minutes on each side. Serve with the rice.
