Lemon Tarragon Baked Chicken Breasts

Grated peel and juice of 1/2 lemon
1 tablespoon vegetable oil
1/3 cup flour
1/2 teaspoon paprika and tarragon leaves, crushed
1/4 teaspoon garlic or onion powder
3 chicken breast halves, skinned and excess fat removed
Lemon wedges, optionalRecipe
• In shallow dish, combine lemon peel, juice and oil. In second dish, combine flour, paprika, tarragon and garlic powder. Dip chicken in lemon mixture; coat with flour mixture.
• Arrange chicken on rack in shallow baking pan. Bake at 375 degrees for 35 to 40 minutes until tender.
• Garnish with lemon wedges, if desired.
