Margarita Chicken:
6 chicken pieces
2 cups Margarita mix
Margarita salt as needed
Marinated Veggies:
1 large zucchini cut into 1/2" slices and then cut in half.
1 medium onion, sliced into 1/2" pieces
10 whole button mushrooms
1/2 cup olive oil
1/2 cup soy sauce
1/2 cup lime or lemon juice

Margarita Chicken:
Put 6 chicken pieces in a ziploc bag and cover with 2 cups Margarita mix. Let marinate for 4 hours. Discard marinade. Sprinkle with Margarita salt and grill for 45 mins. to 1 hr. (or until done) on medium heat, turning every 15 minutes. (I grill my chicken with the skin on, it seems to have better flavor that way.)
Marinated Veggies:
Put all ingredients in ziploc bag and marinate for 30 mins. Discard marinade. Put veggies on skewers, sprinkle with ground ginger, and grill on medium heat for about 5 mins. on each side.
We had ours with Black-eyed peas with salsa, but it would go really well with pinto beans or even rice!
