    Orange Cashew Chicken

    List of Ingredients

    2-3 cups cooked chicken
    2 medium carrots, sliced
    1 small can water chestnuts, if desired
    2 tablespoons vegetable oil
    2 tablespoons cornstarch
    3/4 cup orange juice
    1/4 cup honey
    3 tablespoons soy sauce
    1/4 to 1/2 cup salted cashews

    Recipe

    In a large skillet or wok, cook chicken quickly in oil until barely brown; add carrots and water chestnuts. Reduce heat. In a small bowl, combine the cornstarch, orange juice, honey and soy sauce; blend well. Stir into chicken mixture. Bring to a simmer; cook 2 minutes. Stir in cashews. Serve over rice.

    NOTE: can substitute peanuts for the cashews.
