Oven Chicken Croquettes

5 tablespoons butter, divided
3 tablespoons flour
1/2 cup milk
1/2 cup chicken broth
2 cups finely chopped cooked chicken
1-1/4 cups bread crumbs, divided
3 tablespoons fresh parsley
1/4 tsp salt
2 eggs, beaten
1/4 cup Parmesan cheeseRecipe
Melt 3 tablespoons of butter; add the flour and cook for 1-2 minutes. Gradually whisk in the milk and broth. Cook till thick, set aside and let cool for 5 minutes.
Combine the chicken, 1 cup of breadcrumbs, parsley, salt and eggs. Mix well. Pour in the sauce, blend, cover and chill for 2 hours until set. Preheat the oven to 350 degrees. Combine the Parmesan cheese and remaining breadcrumbs. Shape the mixture into oval patties (should make 8).
Roll in the cheese/bread crumb mixture and place in a greased baking dish (12x8x2"). Melt remaining 2 tablespoons of butter and drizzle over the croquettes. Bake for 40 minutes.
* Cracker crumbs could be used in place of the bread crumbs and chives could be used in place of the parsley.
