List of Ingredients
1 3# or 4# cut-up fryer
salt & pepper as needed
milk as needed
1 - 1½ cups flour
1/2 tsp. salt
1/4 tsp. pepper
oil to depth of 1/4 inch in skillet
1 - 2 tbsp. butter added to oil
Recipe
Rub chicken pieces with salt and pepper. Cover and refrigerate for at least 20-30 minutes. Pour enough milk over the chicken to completely cover all. Refrigerate another 20-30 minutes minimum.
Drain chicken and reserve milk to use for gravy. Combine flour, salt & pepper and mix well. Heat oil & butter in a large skillet over medium to medium-high heat. Dredge chicken in seasoned flour and fry to a deep golden brown, turning carefully so not to dislodge the breading.
Remove chicken from skillet. Spoon out excess oil, leaving about 3-4 tbsp. Take 2-4 tbsp. of the seasoned flour and add to pan drippings, blending until smooth and cooking for about 2 minutes. Add reserved milk and cook, stirring constantly, until gravy thickens, adding more milk if it gets too thick.
Butter may be omitted - I add it because the chicken browns prettier with it.
