Recipe Link: http://messageboards.ivillage.com/n/mb/message.asp?webtag=iv-fdcooking&msg=8027.1List of Ingredients 1 1/2 Tbls. oil 1 medium onion, thinly sliced 1 clove garlic, minced 1 lb. boneless skinless chicken thighs, cut in 1/4 in.strips 1 green pepper diced 3 Tbls. peanut butter 3 Tbls. soy sauce 1 Tbls. rice wine vinegar 1/8 to 1/4 tsp. red pepper flakes 2 cups cooked rice 1/2 cup dry roasted peanutsRecipe Combine oil, onion and garlic in a 3 qt. casserole. Cover and microwave on high 3 to 4 minutes or until onion is tender. Add chicken strips, cover and microwave on high 4 minutes. Stir in green pepper, peanut butter, soy sauce, vinegar, and red pepper flakes. Cover and microwave 3-4 minutes or until chicken is cooked and pepper is tender-crisp. Stir in rice, cover and microwave on high 4 to 5 minutes until heated through. Sprinkle with peanuts. Makes 4 servings
