2-3 tsp. Curry powder
1/4 tsp. Black pepper
1/8 tsp. salt
1 Onion chopped
1/4 C fat-free chicken broth or water
1 TBLES. Brown sugar
1 TBLES. Dry mustard or dijon mustard
2 C orange juice
1 C uncooked long grain rice
6 Boneless skinless chicken breast halves
Recipe
Mix curry powder, pepper & salt together and rub on chicken.
In a large nonstick skillet coated with cooking spray, cook onions for about 5 mins. Add orange juice, broth, rice, sugar and mustard. Mix well then place chicken on top.
Bring to a boil over medium heat. Cover and reduce heat to low, simmer for 20 mins. Remove from heat and let stand 5 mins. or until liquid is absorbed.
