    1/2 stick of butter or margarine
    2/3 cup minced green onions
    1 cup chopped mushrooms
    1 cup uncooked rice, Uncle Ben's preferred
    14 ounce can chicken broth
    1 ounce package Ranch Dressing mix
    1/4 cup finely shredded carrot, optional
    1/3 cup toasted sliced almonds

    Recipe



    Melt butter or margarine in a saucepan. Add onions and mushrooms and cook over medium heat until tender but not browned. Add rice. Combine broth with enough water to equal 2 1/4 cups of liquid. Add to saucepan. Stir in dressing mix and carrot. Bring to a boil, then reduce heat to simmer until liquid is absorbed, about 22 to 25 minutes. Fluff with a fork and sprinkle almonds on top before serving. Makes about 6 servings.

    NOTE: For a spicier version, add 1 or 2 minced jalapeno peppers along with the onions and mushrooms.
