Bacon & Potato Salad

List of Ingredients
6 bacon strips
2 lbs. small red potatoes
1/4 cup chopped green onion
3 tbsp. chopped fresh parsley
1 tbsp. wine or herb vinegar
3 tbsp. olive oil
½ to ¾ cup sour cream
salt to taste
fresh ground black pepper to taste
Recipe
Fry bacon & crumble; cook potatoes with skins on - cool & dice. Combine remaining ingredients and blend well - toss with bacon & potatoes; cover & chill about four hours before serving.
