Caramel Apple Salad

List of Ingredients
1 cup cold fat free skim milk
1 package (1 oz) sugar free INSTANT butterscotch pudding
2 cups reduced fat whipped topping (Cool Whip), divided (I used the totally fat free kind and it worked great)
3 1/2 cups chopped UNPEELED apples (I used red delicious but a mix of different colored apples is really pretty too)
1/2 cup chopped salted peanuts (I used pecans)Recipe
In a bowl, whisk milk and pudding mix for 1 minute (mixture will be thick). Whisk in 1 cup whipped topping. Fold in remaining topping. Fold in apples (I used one of those apple slicers that you just push down on the apple and you get lovely slices and makes chopping a breeze). Add pecans, leaving a few to sprinkle on top of salad for garnish. Refrigerate until serving.
