3 Cups Cooked Chicken
4 Cups Cabbage (shredded)
1 Cup Mayonnaise
1/4 Cup Sugar
2 Tablespoons Apple Cider Vinegar
Pepper (to taste)
1 Cup Honey Roasted Peanuts
Recipe
Grill, bake or boil chicken, cut into chunks. Place into a bowl, cover and chill.
In a small bowl mix mayonnaise, sugar, apple cider vinegar and pepper. Mix until smooth. Cover and chill at least one hour.
Cover and chill shredded cabbage.
When ready to serve, mix chicken and cabbage in a large serving bowl. Pour cold dressing over chicken and cabbage. Mix until well coated. Add peanuts and stir a few times to blend nuts into salad.
Important: This salad cannot be mixed ahead of time. That is why everything is chilled before blending together.
Other shredded and chilled veggies can be added to this salad. Such as carrot, onion, mushrooms, green pepper etc. Just add what you like. Or what you have on hand. Then get ready to hear all the compliments.
