1 lb chicken, cooked & diced (can use leftover or I boil in garlic, seasoned salt and olive oil...save broth for soups)
4 tbsp salad dressing (aka mayo)
1/4 cup finely diced red onion
2 tsp mustard
2 tsp dill pickle relish (NOT the sweet kind)
1 tsp paprika
1 tsp chilli powder (vary to taste)
1/2 tsp cracked black pepper
Recipe
Mix all this together and chill until ready to eat. I serve over croissants or a good wheat toast. Some people may prefer to add extra mayo; however, I don't like soupy salad.
