2 1/2 c. grape tomatoes, cut in half
2 ribs celery, diced
1/4 c. pitted black olives, sliced
1/3 c. stuffed gr. olives, sliced
1/4 c. minced parsley
1 sm. clove garlic, peeled and minced
1 lg, carrot, julienne (we grated this instead)
1/3 c. onion, finely minced
1 T. virgin olive oil
1/2 T. balsamic vinegar
salt and pepper to taste
Recipe
Combine all ingredients in large bowl. Taste to correct seasoning if needed.
Let stand at room temp. about 30 min. Serve over grilled sliced Italian or French bread, sliced about 3/4 in. thick.
Can increase all ingredients for as many people you will be serving. May serve just as salad, omitting the sliced bread.
