2 large cucumbers, chopped
2 red, 2 yellow & 2 green peppers, chopped
few carrots, sliced
1 can sliced mushrooms (or box fresh, sliced)
1-2 cans baby corn, cut to halves or thirds
2 red onions, sliced (and halve the slices)
bean sprouts
2 zucchinis, sliced
snow peas
and any other vegetable you like
Dressing:
1 1/2 cups vinegar
1/2 cup sugar
4 cloves garlic, sliced
3/4 cup oil
4 tsp salt
Recipe
Toss salad ingredient together.
Combine dressing ingredients in pot, cook till it boils for a minute, then remove the garlic slices and pour it over the salad. Toss to coat; refrigerate at least overnight.
