    Pineapple Waldorf Salad

    1/2 cup coarsely chopped pecans
    1/2 cup pineapple juice, divided use
    2 Red Delicious apples, unpeeled and sliced
    1 cup mini marshmallows
    1 tablespoon lemon juice
    2 teaspoons sugar
    1/8 teaspoon salt
    1/2 package (4-ounces) light cream cheese, softened
    1 cup light frozen whipped topping, thawed
    3 cups fresh pineapple chunks
    1 cup thinly sliced celery

    Bake pecans in a shallow pan at 350 degrees, stirring occasionally, 5 to 10 minutes or until toasted; cool.

    Combine 1/4 cup pineapple juice and apple in a large bowl, tossing to coat; set aside.

    Combine remaining 1/4 cup pineapple juice, marshmallows and next 3 ingredients.

    Beat cream cheese at medium speed with an electric mixer until smooth; fold in whipped topping and marshmallow mixture.

    Drain apples; toss with pecans, pineapple chunks, and celery. Fold in cream cheese mixture.
