    Seaside Gelatin Salad

    List of Ingredients

    4 packages (3 oz each) berry blue gelatin
    3 cups boiling water
    3 cups cold water
    1 can (20 0z) crushed pineapple, drained
    1 3/4 cups graham cracker crumbs (about 28 squares)
    6 T butter or margarine, melted
    1/4 cup sugar
    Candies for decorating

    Recipe

    In a large bowl, dissolve gelatin in boiling water. Stir in cold water and pineapple. Pour into a 13 inch by 9 inch by 2 inch dish. Refrigerate until set. In a bowl, combine the cracker crumbs, butter and sugar; cover and refrigerate. Just before serving, sprinkle cracker mixture over half of the gelatin to form a beach. Decorate as desired. Makes 12-15 servings.

    In the picture, this dessert is decorated with candy seashells and life savers; gummy sea creatures, a couple of the beach blanket cookies and beach themed frou-frou from the party supply shop.
