3 TBLES. red wine vinegar
2 teas. extra-virgin olive oil
1 teas. dried oregano
1/4 teas. black pepper
2 garlic cloves, minced
3 C cooked spaghetti squash
2 C chopped tomatoes
1 C chopped cucumbers
1/2 C crumbled feta cheese
1/4 C diced green bell pepper
1/4 C diced red onion
2 TBLES. chopped black olives
Recipe
Cut spaghetti squash in half and clean. Place in baking pan with water, place in oven at 350 and cook until tender. Let cool and then take a fork and scrape out insides. Add peppers, cucumbers, onions, tomatoes, olives and feta cheese to the spaghetti squash.
Wisk together first five ingredients and pour over the salad.
