2 Tbsp Minced Green Onion
1/2 Tsp Fresh Lemon Juice
1/2 C Olive Oil
3 Tbsp Balsamic Vinegar -or- Red Wine Vinegar
Salt And Fresh Pepper To Taste
1 1/4 Lb Spinach, Stems Removed
2 Tbsp Chopped Basil Fresh
For Topping:
4 Ozs Fresh Grated Parmesan Cheese
2 Tbsp Pine Nuts
Recipe
Toss spinach, green onion and basil in large bowl. Divide greens among plates.
Mix lemon juice, oil, vinegar, salt and fresh ground black pepper. Spoon enough dressing over greens to season to taste and toss. Top with parmesan & pine nuts.
