1/2 lb. cottage cheese
1 three oz pkg. cream cheese, room temperature
1 doz. stuffed olives
1 tsp. salt
1 c. pecan pieces
Cayenne pepper to taste
2 long green peppers
French dressing recipe below.
Recipe
Chop olives and pecans fine; add seasonings and cheeses.
Cut peppers in half lengthwise. Remove seeds from peppers and drop in boiling water; boil rapidly
for 5 minutes and then run through cold water.
Fill each pepper half with cheese mixture. Press firmly and then chill thoroughly.
Slice and serve on lettuce leaf with French Dressing.
French Dressing:
1/2 c. sugar
1/4 tsp. paprika
1 c. salad oil
1 tspl salt
Juice of 1/2 lemon
1/4 c. vinegar
Combine all ingredients. Shake well. Yields 1 pint.
