10 - 12 oz. fresh spinach, washed & torn into bit-size pieces
julienne sliced red onion to taste
5 - 6 radishes, thinly sliced (optional)
2 hard-cooked eggs, 1 chopped, 1 sliced
2 - 4 slices bacon
1 - 1½ tablespoons bacon drippings
1 1/2 tbsp. sugar
3 tbsp. vinegar
1 tbsp. water
1/2 tsp. salt
1/8 tsp. pepper
Recipe
Fry bacon until crisp; remove to paper towel and set aside.
Keep required amount of bacon drippings in skillet. Add sugar, vinegar, water, salt and pepper and simmer until sugar is dissolved. Add spinach until wilted.
Remove to a bowl and toss with chopped bacon, onion, radishes, and eggs.
