    Best Ever Chicken Salad Sandwich

    List of Ingredients

    Dressing:
    1/2 cup mayonnaise
    1/4 cup sour cream
    1 heaping tbsp. dijon mustard
    1 tsp. sugar (I omit the sugar)
    1/4 tsp. salt
    1/4 heaping tsp. black pepper
    2½ tsp. lemon juice

    Combine ingredients, mix well & store refrigerated.

    Sandwich filling:
    1½ cups shredded cooked chicken
    1/2 cup finely chopped celery
    2 tbsp. finely chopped green onions
    1/4 cup chopped toasted pecans

    Combine ingredients with the dressing from above - chill at least two hours, but preferably 4-6 hours before serving.

    Recipe

    For each sandwich:
    1 thick slice sweet, dark, whole-grain bread (or your favorite)
    1/2 cup chicken salad
    3 slices crisp-cooked bacon
    1 thick slice provolone or white american cheese

    Spread bread with chicken salad; run under the broiler for about a minute until heated, but not bubbly. Remove from broiler & place bacon & cheese on top. Return to broiler just long enough to melt the cheese, and serve immediately.
