Cream Cheese Egg Salad Sandwiches

Recipe Introduction
These are really good and makes a lot of sandwiches.
Boil the following until thick -
1 Tb. butter (Used 1 TB more.)
1 Tb. flour (Used 2 - because I didn't read the recipe! LOL!)
2 Tb. sugar
1/2 tsp. salt
1 Tb. vinegar (I used some tarragon and pear balsamic - use what you have.)
1 beaten egg
1/2 c. 1/2 & 1/2 or cream (I used whole milk with excellent results.)
Then add:
8 oz. cream cheese
1 Tb. chopped onion (optional - so I didn't use it.)
8 - 10 grated hard boiled eggs (I used a dozen!)
pepper and salt to taste.
