Not Your Ordinary Chicken Sandwich

I lightly toasted two slices of Italian bread, spread them with sun dried tomato pesto (I buy mine in a tub from Contadina), sliced a couple of Kalamata olives and sprinkled those and a few feta cheese crumbles atop the pesto, then topped it all with some sliced, cold, leftover roast chicken.
The chicken I used had been rubbed inside and out with fresh lemon juice and cooked with rosemary sprigs and garlic cloves tucked under the skin.
I served the sandwich open face and have to admit, I ate both halves! It held me over till we had the Spinach Salad for dinner, along with sliced sourdough baguette and brie cheese. Most enjoyable!
