I have used this idea with leftover roasted lamb, and vegetables. It is adapted from a corned beef fritter recipe, but would work fine for any leftover meat.

Beat together a cup of self-rising flour, one egg and a splash of milk (to get a pancake batter consistency). Stir in diced meat and any leftover cooked veggies.
Fry spoonfuls of the batter as you would pancakes.
Delicious topped with a little gravy!
