    Cabernet Mushroom Sauce

    8 oz. sliced mushrooms
    butter & olive oil for sautéin
    1½ tbsp. flour
    6 oz. cabernet
    6 oz. condensed beef broth
    salt & white pepper to taste

    Recipe



    Sauté mushrooms in butter & olive oil until nicely browned. Sprinkle with flour and blend, adding additional butter if necessary, to make a nice roux.
    Cook & stir for 2-3 minutes.

    Add wine and broth, stirring constantly, until
    thickened. Reduce heat and allow to cook several more minutes. Season if necessary.

    May be ladled over chicken, pork or beef, or add slices of meat to the sauce and allow it to cook in the sauce.
