List of Ingredients
12 Onions
6 Green Bell Pepper -- Optional
1 1/2 C Vegetable Oil -- Or Less
1 1/2 Tsp Black Pepper
36 Tomatoes
4 Cloves Minced Garlic
3 Tbsp Salt
4 Tbsp Sugar
2 Tbsp Oregano
2 Tbsp Basil
2 Tbsp Thyme
12 Bay Leaves
5 12 Oz Cans Tomato Paste
Recipe
Grind up the onions and peppers in a food processor or whatever you use and simmer in the vegetable oil. Add black pepper. In a LARGE cooking pan, place the prepared tomatoes(drop them in boiling water for a few seconds and the skins comes right off)chopped as fine as you like them, garlic, salt, sugar, herbs and onion mixture. Bring to a good rolling boil. Add tomato paste last, one can at a time. Cook for a while, as long as you like.
Remove bay leaves before using (I count how many I put in ahead and count them coming out again, the stem in them can cause stomach trouble). I freeze whatever sauce I'm not using right away in different size containers for different uses. Small for pizza, larger for our family and a couple very large ones for when company is coming. This makes 7 quarts. Enjoy.
NOTES : Easy to cut in half or thirds.
