Fresh (or canned) diced tomatoes
(boil & peel them)
1 medium onion minced
5-6 cloves garlic minced
Fresh or dried basil & oregano
Any kind of dark, red wine (Cabernet or Merlot)
1 small can tomato sauce
Salt/Pepper
1 Tablespoon sugar
Parmesan cheese - grated

Saute garlic & onions in a small amount of butter until soft - do not burn (I use an electric fry pan with a lid), add diced tomatoes and tomato sauce, wine and bring to a boil. Reduce heat, add basil, oregano, salt, pepper, sugar and cheese. Mix well and let reduce slightly.
I usually let simmer for an hour or so before serving over pasta - the best is either linguine, spaghetti or angel hair.
