    3 oz. portobello mushrooms
    1/4 cup butter
    1 large or 2 small cloves garlic, minced
    1/2 cup cream
    1/2 cup milk
    1/4 cup grated fresh parmesan (I used more)
    1/2 tsp. coarsely ground pepper
    1/4 tsp. salt
    1 tbsp. flat leaf parsley, chopped
    sprigs of parsley for garnish

    Scoop out gills from portobellos & discard - this is so they won't turn your sauce a gray color. Chop the "de-gilled" mushrooms & sauté in butter, along with the minced garlic, over med-low heat about five minutes. Add cream and milk, bring to boiling, reduce heat and simmer about 8 minutes. Add parmesan, pepper & salt; stir until cheese all melts. Add chopped parsley and serve over hot cooked fettuccine, garnished with parsley sprigs.
