3 to 4 ½ cups hot cooked broccoli florets, well drained
grated parmesan as needed
½ tsp salt
2 TBSP butter or marg.
1/8 tsp pepper
2 TBSP flour
dash ground nutmeg
1 cup milk
½ cup soft white bread crumbs, leave on crust for color
½ cup chicken broth
Recipe
Make a white sauce by melting butter, whisking in flour till smooth. When bubbling, gradually add milk, whisking and stirring till sauce bubbles and thickens. Whisk in broth, 1/3 cup parmesan (if you use more leave out salt) salt, pepper and nutmeg.
Spoon sauce over broccoli. All ingredients should be hot.
Combine bread crumbs and 2 TBSP grated parmesan and sprinkle evenly over top of casserole. Broil 4 to 5 inches from heat 2 – 3 minutes till lightly browned. (Closer and bread will burn)
