1 head of cauliflower
1/2 stick butter, melted
1 TBS. Sugar
1/2 tsp. salt
1/2 tsp. pepper
3/4 cup cracker crumbs
1 can stewed tomatoes with juice
1 and 1/2 cup shredded cheddar cheese, divided
Recipe
Wash cauliflower and break into flowerets. Cook in a small amount of boiling water, salted and covered with a lid. Drain. Combine butter, sugar, salt pepper, crumbs. Add stewed tomatoes, 1 and 1/4 cup cheese, and cauliflower. Pour into 2 qt. casserole and sprinkle with remaining cheese. Cover and bake at 350 for 50 to 60 minutes.
