Eggplant Casserole

Slice one large eggplant and grill using a flavored spray ie italian or garlic and put aside.
In a food processor combine two large roasted red peppers, 3-4 large tomatoes, and two cloves of garlic, puree to a thick liquid.
Saut� 6 fresh chopped mushrooms, one medium chopped onion, in one tbsp of olive oil. Add 1/2 cup seasoned bread crumbs and oregano to taste. Put aside.
In a bake dish (sprayed with cooking spray) layer the eggplant, then the mushroom combo, and the "sauce" along with a sprinkling of mozzarella until all the ingredients have been added to the casserole (usually about five layers). Top with parmesan cheese and bake for about 15 minutes at 180C/350F.
