    1-1/2 lbs turnips, peeled and sliced
    1-1/2 tsp salt, divided
    1/2 tsp sugar
    1/2 cup butter or margarine
    2 T flour
    2/3 cup milk
    4 eggs separated
    3 bacon strips, cooked and chopped

    Recipe



    Place turnips, sugar, and 1/2 tsp of the salt in a saucepan, cover with water. Cover and cook till turnips are tender (15-30 minutes); drain well and mash. Set aside. Melt butter, stir in flour and 1 tsp salt until mixture is smooth. Add milk, bring to a boil. Cook and stir for two minutes.

    Beat egg yolks in a small bowl, gradually stir in 1/2 cup of the milk mixture. Return all to pan, cook and stir for one minute. Stir in turnips and remove from heat. Beat egg whites till stiff peaks form; fold into batter.

    Spoon into a greased 11 in. x 7 in x 2 in glass baking dish. Sprinkle with bacon. Bake, uncovered at 320 for 30 minutes or till golden brown.

    Yield: 6-8 servings
