Roasted Pumpkin Seeds

Clean & wash the seeds from two large pumpkins and soak overnight in brine made of 1 cup water and 1/3 cup salt.
Drain seeds (and rinse lightly if desired); roast at 275°, stirring occasionally, until seeds are crunchy & take on a pretty golden color.
May alternately eliminate the brine soak and instead, spritz with olive oil cooking spray & a sprinkle of soy sauce before roasting.
