Spiced Pecans II

Beat 1 egg white until frothy with 1 TB warm water. Add a pinch of salt.
In a plastic bag, combine 1/2 c. sugar, 1 TB cinnamon and 4 heavy shakes each of: nutmeg, cloves and ginger.
Fold 4 c. of pecan halves into beaten egg whites to cover.
Put pecan mixture into plastic bag with spice mixture and shake well to coat.
Spread on lightly greased cookie sheet and bake at 225 for 1 hour, stirring every 15 minutes or so to prevent sticking.
When they're cool, you can stir extras into them if you like (chocolate chips, after they're cool, to prevent melting; crystalized ginger, chopped dried apricots, dried cranberries, etc.).
