15 Bean Chili with Italian Sausage

1 lb. Bag 15 bean mix
1 lb. Bag Red beans
1 tbsp cinnamon
1 packet taco seasoning
12 oz ground Italian sausage (browned)
29 oz crushed tomatoes
29 oz tomato sauce
Water (+/-29 oz, as needed)
1 tbsp sugar
Pepper (to taste)
Seasoning salt (to taste)
2 tsp Garlic powder (or 3 cloves)
5 tsp California Chili powder
1 ½ tbsp Whole Mexican Oregano
1 ½ tbsp Ground Cumin Seed
1 tsp crushed red pepper
2 tsp paprika
2 tsp Cajun seasoning
Cornstarch to thicken (2 tbsp)
1 tbsp Montreal chicken seasoning (optional)
Recipe
Soak beans overnight or use quick soak method.
Throw all ingredients into a big pot and cook over low heat for 6-8 hours. Stir occasionally to avoid burning. Check to make sure beans are softened before serving! Spice measurements are a starting point . . . add more as needed and to taste.
