Meatballs:
1 lb ground beef (80% lean)
1/2 onion diced
1/2 tsp fresh mint
1 egg
3 Tbsp raw rice
1/4 tsp ground cumin
1/4 tsp black pepper
1 pinch oregano
1/4 tsp granulated garlic
1 tsp salt
Soup mixture:
3 stalks celery with leaves, chopped
1 1/2 onion, chopped
2 carrots, sliced
2 medium or l large potato, cut into cubes
1/4 tsp black pepper
1 tsp garlic
1 can chicken broth
1 8 oz can tomato sauce
2 bay leaves
1 Tbsp salt
1 Tbsp fresh cilantro
8 cups water
2 small zucchini, sliced
1/4 c rice, raw

Meatballs:
Chop onion and mint. Mix all ingredients together and make 20 - 25 small meatballs. Set aside.
Soup mixture:
Combine all ingredients and bring to a boil. Add meatballs slowly. Simmer about 1/2 hour.
If you are having company, double the recipe, because everyone will want seconds on this one.
