Apple Cider Beef Stew

List of Ingredients
2 lbs. beef stew meat
2 Tbls. oil
3 cups apple cider
2 Tbls. apple cider vinegar
2 tsp. salt
1/4 tsp. dried thyme
pepper to taste
3 med. potatoes peeled, cubed
4 med. carrots, peeled and cut into 3/4" pieces
3 ribs celery, cut into 3/4" pieces
2 med onions, cut into wedges
1/4 cup flour
1/4 cup waterRecipe
Brown meat in oil, add cider, cider vinegar, salt, thyme, and pepper. Bring to a boil, reduce heat and simmer for 1 1/4 hours, covered.
Add potatoes, carrots, celery and onion, return to a boil, reduce heat and simmer again for 35 minutes or till all veggies are tender. Combine the flour and water, stir into hot mixture, and cook and stir for 2 minutes.
Laurel note: (I used more stew meat than it called for and added a spoonful of beef base. Since Mark prefers a soupy texture to a stewlike one, I didn't thicken with flour.)
