2½ lbs. beef, cut in 1 - 1¼ inch pieces
3 large cloves garlic, crushed
3 tbsp. vegetable oil
2 cups water
1 cup dry red wine
1/3 cup tomato paste
3 cinnamon sticks
1 tbsp. packed brown sugar
2 bay leaves
1 tsp. ground cumin
1 tsp. salt
2 medium onions, chopped in 1 inch chunks
1/4 cup golden raisins
cooked pasta (optional)
Recipe
Brown beef & garlic in heated oil; pour off excess oil. Stir in water, wine, tomato paste, cinnamon sticks, sugar, bay leaves, cumin & salt; bring to boiling. Reduce heat to low, cover tightly and cook 1 - 1½ hours. Add onion and continue cooking, covered, 25 more minutes, or until beef is tender. Stir in raisins & cook five minutes. Remove from heat. Take out cinnamon sticks and bay leaves. Serve over pasta if desired.
